 请教：

我们这儿的豆腐都是又软又滑，石膏粉特别多那种，不知能否使用，用豆干可以代替吗？看上去像豆干。

煎炸时，油是否要过面？

 谢谢指教，都记在心上了。我们这儿豆腐种类很多，基本上都是装在盒子里，用水浸泡着的。有种叫豆干，估计就是你说的老豆腐，真空包装，四四方方，可切四块，硬硬邦邦。做完了，再向你汇报结果。谢谢，才貌双全的小姐。
